After finding it hard to get the right food for herself in restaurants Doireann Barrett started on the road to what would eventually be The Gluten Free Kitchen Company in Tralee, Co. Kerry. Doireann explains about taking the decision to quit her job and start one of the only totally Gluten Free café and restaurants in Europe.’
